If you want to make this tasty white chocolate orange pie for a delicious dessert you will need to gather together the following ;
INGREDIENTS
150g/5oz unsalted butter or baking margarine
200g/7oz white chocolate, save a little to decorate the top (optional)
250g/8oz shortbread
300ml/10fl oz sour cream
300ml/10fl oz double cream
Large tin of mandarin segments, drained
METHOD
Grease and line a deep 8" cake tin.
Crush the shortbread with a rolling pin on a chopping board.
Melt just 90g/3oz of the butter in a pan.
Add the shortbread to the pan and mix well.
Press this mixture firmly into the cake tin and chill until required.
Melt the chocolate and the remaining butter in a bowl over a pan of simmering water.
When melted remove from the pan and stir in the sour cream.
Whip the double cream to form soft peaks and gently fold into the chocolate mixture.
Spoon over the shortbread base, smooth the top and chill for at least 6 hours.
When ready to serve carefully arrange the drained mandarin segments around the edge of the pie.
Grate some white chocolate on the top if required.
Slice and serve your delicious dessert!
When I made this pie I didn't have a deep 8" cake tin so I used 2 x 7" shallow tins which was fine so I could have halved the ingredients for 1 shallow 7" pie. This could be preferable if you prefer a more equal mix of base and topping.
