A really good recipe for triple chocolate muffins, to make a batch of a dozen muffins you will need the following ;
INGREDIENTS
2oz/50g unsalted butter or baking margarine, melted
12oz/375g self-raising flour, sieved
1tbsp baking powder
2oz/50g cocoa powder
3.5oz/100g golden caster sugar
1 egg
12fl oz/350mls milk
100g packet dark chocolate chips
100g packet white chocolate chips
METHOD
Preheat the oven to 200C, 400F, Gas 6.
Line a muffin tin with 12 paper cases.
Sieve the flour, baking powder and cocoa powder into a large mixing bowl.
Using a wooden spoon stir in the caster sugar.
Beat the egg and the milk together in a jug.
Make a well in the dry ingredients.
Pour the milk/egg mixture into the well and stir until well combined.
Carefully stir in the chocolate chips.
Using a tablespoon divide the mixture between the 12 paper cases.
Bake in the centre of the preheated oven for about 20-25 minutes until well risen and firm to the touch.
Allow to cool a little and serve.
If not eaten the same day store in an airtight container.
