These strawberry muffins contain a combination of strawberries and chocolate.
I have specified white and dark chocolate in equal quantities,but there is room for experimentation here.
Milk ,dark or white chocolate in whatever proportion takes your fancy.
To make a batch of these tasty muffins you will need ;
INGREDIENTS
150g golden caster sugar
50g unsalted butter or baking margarine
1 egg
1 tsp vanilla extract
300g plain white flour
225 mls milk
2 tsps baking powder
150g fresh strawberries, washed
50g white chocolate
50g dark chocolate
METHOD
Preheat oven to 200C, Gas 6.
Line a muffin tin with paper cases.
In a large mixing bowl beat together the egg and the sugar.
Stir in the vanilla extract.
Gently melt the butter in a small saucepan, cool and add to the mixing bowl.
Beat in the milk.
Sieve the flour and the baking powder and gradually fold in to the mixture.
Chop the chocolate into small pieces and carefully stir in.
Chop the strawberries and add to the bowl gently stirring.
Spoon the mixture in to the paper cases, this recipe will make 12 large muffins or 18 small.
Bake in the centre of the preheated oven for 25-30 minutes until golden brown and firm to the touch.
Serve warm or allow to cool completely and store in an airtight container.
Now you have a batch of really yummy muffins!
