To make these yummy rocky road muffins you will need ;
INGREDIENTS
225g/8oz plain flour
1tbsp baking powder
50g/2oz cocoa powder
125g/4.5oz caster sugar
100g/3.5oz white chocolate chips
50g/2oz white marshmallows, chopped
2 eggs
250mls/8.5fl oz milk
85g/3oz butter, melted
METHOD
Preheat the oven to 200C, 400F, Gas 6.
Line a muffin tin with 12 paper cases.
Sift together the flour, cocoa and baking powder.
Stir in the sugar, chocolate chips and chopped marshmallows.
Beat the eggs, milk and butter together.
Gently combine the 2 mixtures together without over mixing.
Spoon the mixture into the paper cases and bake for about 20 minutes until firm to the touch.
Leave to cool and store in an airtight container.
Unfortunately these muffins are unsuitable for vegetarians due to the gelatine in the marshmallows.
