To make this tasty red velvet cake, just follow the recipe below ;
INGREDIENTS
250g butter, softened, or baking margarine
600g golden caster sugar
6 eggs
2 tbsp red food colouring
3 tbsp cocoa powder
375g plain flour
250g buttermilk
1 tsp vanilla extract
1/2 tsp salt
1 tsp bicarbonate of soda
1 tbsp cider vinegar
ICING
100g cream cheese
200g white chocolate
125g butter,softened
Chopped nuts, strawberries and chocolate to decorate
METHOD
Preheat oven to 170C, Gas 3.
Grease and line 3 20cm circular shallow baking tins.
Cream the butter and sugar in a large mixing bowl, then add eggs one at a time, beating well after each one.
Mix food colouring with cocoa powder and add to the mixture.
Mix flour with buttermilk, then pour into the mixture.
Add the vanilla and salt, then stir in.
Mix the bicarbonate of soda with vinegar, then gently stir into the mixture, but don't over mix.
Divide the mixture equally into the baking tins, then bake in the preheated oven for 30 mins, until risen and firm to the touch.
Allow to cool a little in the tin then transfer to a cooling rack.
Do not ice until the cake is completely cooled.
ICING
Melt the white chocolate in a heatproof bowl over a pan of simmering water.
Beat the cream cheese in a large mixing bowl until light and fluffy.
Slowly beat in the melted white chocolate and softened butter.
Beat until it is the consistency of whipped cream.
Chill in the fridge until cold.
Use to fill and ice the cake.
Decorate with strawberries, grated chocolate and chopped nuts if desired.
