If you want to bake about a dozen (8 or 9 if you use large muffin cases and fill them) of these tasty orange chocolate chip muffins you will need to gather together the following ;
INGREDIENTS
170g/6oz self raising flour, sieved
115g/4oz golden caster sugar
140ml/5fl oz semi skimmed milk
85g/3oz unsalted butter or baking margarine, melted
2 medium sized eggs, beaten
The peel of one large unwaxed orange, grated or 1 tbsp orange extract, add a bit more if you like a more orangy flavour
100g/3.5oz packet of plain or dark chocolate chips
METHOD
Preheat the oven to 180C, 350F, Gas 4
Line a muffin tin with 12 paper muffin cases.
Sieve the flour into a large mixing bowl.
Stir in the caster sugar.
In a separate bowl beat the eggs, milk, melted butter and orange peel or extract together until well combined.
Make a well in the centre of the dry ingredients and pour the milk mixture in.
Stir with a wooden spoon until well combined, as with all muffin recipes, do not over mix.
Carefully fold in the chocolate chips.
Using a tablespoon divide the mixture equally between the muffin cases.
Bake for about 25 minutes until the muffins are golden brown and firm to the touch.
Carefully transfer to a cooling rack.
Serve while warm (recommended) or allow to cool completely and then store in an airtight container.
