This recipe makes at least 18 oatmeal chocolate cookies.
INGREDIENTS
125g/4oz butter
125g/4oz golden caster sugar
1 egg
125g/4oz porridge oats
150g/5oz plain flour, sieved
1/2tsp baking powder
1tsp vanilla extract
200g/7oz plain chocolate chips
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Grease 2 large baking sheets.
Cream the butter and sugar together until smooth.
Add the egg, oats and vanilla extract and mix together.
Sieve the flour and baking powder over the mixture and fold in until evenly combined.
Add the chocolate chips and stir.
Put spoonfuls of the mixture on the baking trays spacing well apart.
Flatten them a little with the back of a fork.
Bake for around 15 minutes until risen.
Leave to cool slightly then transfer to a wire rack.
When completely cool store in an airtight container.
