These muesli muffins are a great idea for breakfast, especially for children who aren't keen on eating breakfast, hand them one as they walk out of the door for school!Also a useful and healthy addition to any picnic basket!
To make a tasty batch of 12 you will need to gather together the following ;
INGREDIENTS
5oz/140g self-raising flour, sieved
8oz/225g your favourite muesli, unsweetened preferably
100g packet plain or dark chocolate chips
4oz/115g golden caster sugar
2 eggs, beaten
9fl oz/250mls semi skimmed milk
6tbsp sunflower or vegetable oil
METHOD
Preheat the oven to 200C, 400F, Gas 6.
Line a muffin tin with 12 paper muffin cases.
In a large mixing bowl place the sieved flour with the sugar, muesli and chocolate chips.
Stir until well combined.
In a separate bowl or jug beat together the eggs, milk and oil until smooth.
Make a well in the middle of the dry ingredients and pour in the liquid ingredients.
Stir until well combined but do not over mix.
Spoon the mixture into the muffin cases dividing equally.
Bake in the centre of the preheated oven for about 20 minutes until golden brown and firm to the touch.
Remove from the oven and transfer to a wire rack.
Serve warm or allow to cool and store in an airtight container.
