1tbsp sugar mixed with 1tsp cocoa powder, to decorate
METHOD
Preheat the oven to 190C, 375F.
Line a muffin tin with 12 paper cases.
In a large mixing bowl sieve the flour.
Add the sugar, cocoa, coffee and salt and stir.
In a jug whisk together the milk, butter, egg and vanilla.
Pour the liquid ingredients into the large bowl and stir until blended.
Fill the muffin cases.
Sprinkle the dry sugar/cocoa mixture over the muffins.
Bake for 15-20 minutes until firm to the touch.
Cool on a wire rack.
Store in an airtight container.
