Mint Chocolate Chip Muffins

To make these tasty mint chocolate chip muffins you will need;

INGREDIENTS

280g/10oz self-raisimg flour

115g/4oz caster sugar

150g/6oz chocolate chips

2 eggs

250ml milk

85g/3oz butter, melted

1tsp peppermint extract

METHOD

Preheat the oven to 200C, 400F, Gas 6.

Line a muffin tin with 12 paper bun cases.

Sift the flour into a mixing bowl.

Stir in the sugar and chocolate chips.

Beat the eggs in a bowl and add the milk, butter and peppermint extract.

Make a well in the middle of the flour and pour in the liquid ingredients.

Gently fold together until combined. Do not over mix.

Divide the mixture equally into the muffin cases.

Bake for about 20 minutes until firm to the touch.

Transfer to a wire rack to cool.

Store in an airtight container.
