These lemon muffins with poppy seeds are light and fluffy, quick and easy. To make them you will need ;
INGREDIENTS
10oz/280g plain flour, sieved
1tbsp baking powder
4oz/115g caster sugar
2tbsp poppy seeds
2 eggs
9fl oz/250ml milk
6tbsp sunflower oil
Rind of 2 lemons, finely grated
2tbsp lemon juice
METHOD
Prehaet the oven to 200C, 400F, Gas 6.
Line a muffin tin with 12 paper cases.
In a large mixing bowl place the flour, baking powder, sugar and poppy seeds and mix together.
In a large jug beat together the milk, eggs and oil.
Add the liquid ingredients to the mixing bowl and stir until well combined, do not over mix.
Stir in the lemon rind and lemon juice.
Spoon the mixture into the muffin cases.
Bake in the centre of the oven for about 20 minutes until firm and golden brown.
Transfer to a cooling rack.
Serve your lemon muffins warm or allow to cool and store in an airtight container.
