This lemon loaf cake is a really easy recipe and a great cake to bake for morning coffee or afternoon tea with friends or family. A popular choice!
To bake this delicious cake you will need the following ;
INGREDIENTS
6oz self-raising flour, sieved
6oz golden caster sugar
4oz unsalted butter or baking margarine, softened
2 eggs, beaten
1 fresh lemon, grated zest
For the glaze
Juice of 1 lemon
2oz icing sugar
METHOD
Grease and line a standard size loaf tin.
Preheat the oven to 180C, 350F, Gas 4.
Cream together the butter and sugar in a large mixing bowl until soft and fluffy.
Beat in the eggs little by little until well combined.
Stir in the grated lemon zest.
Fold in the flour until the mixture is well combined.
Pour into the prepared tin, level off and bake in the centre of the oven for about 50 minutes (test with a skewer, it should come out clean).
For the glaze
Mix 2 tbsps lemon juice with the icing sugar and beat until smooth.
When the cake is baked place it on a cooling rack over a board (to catch drips).
Allow to cool.
Make several holes in the cake top and bottom with a skewer or cocktail stick.
Brush the cake all over with the glaze until it has all been absorbed by the cake.
Cut into slices to serve.
If not eaten straight away store in an airtight container.
