Gooey Chocolate Cake

This gooey chocolate cake is made using a Swedish recipe, it is a popular cake in Sweden. As ground almonds are used in place of flour it is a gluten free cake.

To follow this gooey cake recipe you will need to gather together the following ;

INGREDIENTS

4oz/115g dark chocolate, chopped

4oz/115g unsalted butter or baking margarine, cubed

2 medium eggs, separated

5oz/150g ground almonds

1tsp vanilla extract

1oz/25g golden caster sugar

Whipping cream to serve

METHOD

Preheat the oven to 180C, 350F, Gas 4.

Grease and line a shallow 8" round cake tin.

Place the chopped chocolate into a large heavy saucepan and heat gently while stirring until the chocolate has melted.

Add the cubed butter to the pan and stir until melted and the mixture is smooth.

Remove from the heat.

In a large mixing bowl place the egg yolks, ground almonds, sugar and vanilla extract and whisk until smooth and creamy.

In a clean bowl and using clean whisks, whisk up the egg whites until they form stiff peaks.

Pour the chocolate mixture into the large mixing bowl and stir until well combined.

Fold in the egg whites carefully with a metal spoon, take care not to over mix at this stage.

Pour the mixture into the prepared tin and smooth the surface.

Bake in the centre of the preheated oven for about 15 minutes until just set, the cake should still be soft in the centre.

Remove from the oven and leave to cool in the tin.

Transfer to a serving plate, cut and serve with whipped cream.
