Gluten Free Chocolate Cake

This gluten free chocolate cake comes from a Swedish recipe, ground almonds are used instead of flour so this is a gluten free cake recipe. It is very easy to bake and delicious with whipped cream. To make this cake you will need ;

INGREDIENTS

4oz/115g dark chocolate, chopped

4oz/115g/0.5cup unsalted butter

2 eggs, separated

5oz/150g/1.5cups ground almonds

1 tsp vanilla extract

1 tbsp caster sugar

Icing sugar for dusting (optional)

Double cream to serve (optional)

METHOD

Preheat the oven to 180C, 350F, Gas 4.

Grease and line an 8" shallow round cake tin.

Place the chocolate and butter into a large saucepan and heat gently while stirring until the mixture is melted and smooth.

Remove from the heat and beat in the egg yolks, ground almonds, sugar and vanilla extract.

Whisk the egg whites in a separate bowl until they form stiff peaks.

Fold the egg whites into the chocolate mixture until well combined.

Pour the mixture into the prepared tin and even the surface.

Bake in the centre of the preheated oven for about 30 minutes until firm to the touch.

Leave the cake to cool in the tin.

Remove the cake from the tin and dust with icing sugar.

Whip the cream just prior to serving and add according to taste.

Now you have a very tasty gluten free chocolate cake!
