French Chocolate Cake

This recipe for french chocolate cake is dark and delicious. To make it you will need ;

INGREDIENTS

5oz/150g/0.75cup golden caster sugar

10oz/275g plain chocolate, chopped

6oz/175g/0.75cup unsalted butter

2tsp vanilla extract

5 eggs, separated

1.5oz/40g/0.33cup plain flour, sieved

Icing sugar for dusting

METHOD

Preheat the oven to 160C, 325F, Gas mark 3.

Grease and line a 9" round, deep tin.

In a large, heavy saucepan place the chopped chocolate, the butter and the sugar (leaving 3 tbsp to one side for later).

Cook gently while stirring until all the ingredients have melted.

Remove the pan from the heat and allow to cool a little.

Stir in the vanilla extract.

Beat the egg yolks little by little into the pan.

Stir in the sieved flour.

In a separate bowl whisk the egg whites until they form stiff peaks.

Add the remaining sugar and whisk again until stiff and glossy.

Beat half of the egg white mixture into the chocolate mixture then fold in the other half with a metal spoon.

Pour the mixture into the prepared tin and tap the tin a few times to release any trapped air bubbles.

Bake in the centre of the preheated oven for about one hour until firm to the touch.

Allow to cool in the tin for a few minutes and then carefully transfer to a cooling rack.

When cool dust with icing sugar.

Serve and enjoy or store in an airtight container.
