To make these double chocolate chip muffins you will need the following ;
INGREDIENTS
14oz/400g/3.5cups plain flour
1tbsp baking powder
2tbsp cocoa powder
4oz/115g/0.66cups soft dark sugar
2 eggs
0.25pint/150mls/0.66cup double cream
0.25pint/150mls/0.66cup milk
4tbsp sunflower oil
3.5oz/100g white chocolate, chopped
3.5oz/100g dark chocolate, chopped
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Line a muffin tin with 16 paper muffin cases.
Sieve the flour, baking powder and cocoa into a large mixing bowl.
Stir in the sugar.
Beat the eggs with the cream, milk and oil and add to the mixing bowl.
Mix until well combined.
Stir in the chopped chocolate.
Spoon the mixture into the muffin cases and bake in the centre of the oven for about 30 minutes until firm to the touch.
Transfer to a wire rack to cool.
Store in an airtight container.
