To follow this tasty cinnamon cake recipe you will need to start by gathering together the following ;
INGREDIENTS
1oz/25g plain chocolate, chopped
4oz/115g unsalted butter or baking margarine
1 tbsp instant coffee powder
8oz/225g granulated sugar
4oz/115g plain white flour
2 tsp ground cinnamon (or mixed spice is also good)
5 medium sized eggs, separated
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Grease and line a standard size 2lb loaf tin.
Melt the chocolate and butter in a heatproof bowl over a pan of simmering water.
Remove from the heat and stir in the coffee powder.
In a large mixing bowl beat the egg yolks together with the sugar.
Add the warm chocolate mixture and stir until well combined.
In another clean bowl whisk the egg whites until they form stiff peaks.
Sieve the flour and cinnamon and gradually add to the mixture, alternating with the egg whites until the mixture is well combined.
Carefully pour into the prepared loaf tin and even off the top.
Bake in the centre of the preheated oven for around 50-60 minutes until firm to the touch. Test by inserting a metal skewer into the centre of the cake, it should come out clean.
Remove from the oven and carefully transfer from the tin to cool on a wire rack.
Serve warm or allow to cool completely and store in an airtight container.
Although I have made a loaf shaped cake from this recipe, you can, of course make a circular cinnamon cake if you prefer.
