Chocolate Weetabix Loaf

This chocolate weetabix loaf is so simple to make, really tasty and high in fibre. To make it you will need ;

INGREDIENTS

2 chocolate weetabix

1 cup sultanas

1 cup semi-skimmed milk

1/2 cup soft brown sugar

1 cup self-raising flour

METHOD

Put all the ingredients except the flour into a large mixing bowl.

Leave for one hour for the milk to be soaked in.

Preheat the oven to 170C, Gas 3.

Grease and line a standard loaf tin.

Sieve the flour into the mixture and stir until well combined.

Bake in the preheated oven for 1hr 10mins checking after an hour.

The loaf is ready if a knife comes out clean.

Turn out onto a cooling rack.

Can be eaten warm or allow to cool and store in an airtight container.

This recipe came from my mother, she has been making it for years using plain Weetabix, it was a bit of an experiment using the chocolate Weetabix but it works really well!
