To make these tasty chocolate walnut muffins you will need ;
INGREDIENTS
4oz/115g/1cup plain flour
1tbsp cocoa powder
2oz/50g/0.25cup soft brown sugar
4 eggs
4oz/115g/1cup chopped walnuts
1tsp vanilla extract
7oz/200g/1cup caster sugar
6oz/175g/0.75cup butter
5oz/150g dark chocolate, chopped
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Line a muffin tin with 12 paper muffin cases.
Melt the butter and the chocolate in a heatproof bowl over a pan of simmering water.
Stir well and transfer to a large mixing bowl.
Add both the sugars to the chocolate mixture and stir.
Beat the eggs with the vanilla and gradually add to the mixture while stirring.
Sieve the flour and cocoa powder into the mixing bowl and fold in until well combined.
Stir in the walnuts.
Spoon the mixture into the paper cases and bake in the centre of the oven for about 30 minutes or until firm to the touch.
Transfer to a wire rack to cool.
Store in an airtight container.
