Place the sugar in a pan with 16fl oz/475mls/2cups water.
Bring to the boil stirring until the sugar has dissolved.
Boil for 2 minutes.
Add the chopped chocolate and stir continuously until the chocolate has melted and the mixture is smooth.
Pour into a large bowl and leave to cool.
Chill in the fridge stirring occasionally.
Pour into a freezer container and freeze until it goes slushy.
Whisk until smooth and freeze again until almost set.
Whisk again and freeze.
Allow to soften a little before serving and decorate with chocolate curls.
