Chocolate Prune Loaf






Chocolate Prune Loaf



If you want to bake this fibre rich chocolate prune loaf you will need to gather together the following ;

INGREDIENTS

For the cake;

60g/2oz plain chocolate

125g/4oz butter or baking margarine

125g/4oz golden caster sugar

4 medium sized eggs

2tbsp cocoa powder

125g/4oz ground almonds

60g/2oz self-raising flour

175g/6oz ready to eat dried prunes

For the topping;

125g/4oz plain chocolate

30g/1oz butter

Sliced ready to eat dried prunes to decorate

METHOD

Preheat the oven to 180C, 350F, Gas 4.

Grease and line a 1kg/2lb loaf tin.

For the cake;

Melt the chocolate in a heatproof bowl over a pan of simmering water.

Cream the butter and sugar together in a large mixing bowl.

Separate the eggs and beat the yolks into the butter/sugar mixture.

Add the melted chocolate and beat until smooth.

Mix the cocoa powder and ground almond together and carefully fold into the mixture.

Sieve in the flour and stir until well combined.

Stir in the chopped prunes.

Whisk up the egg whites until they form stiff peaks and carefully fold into the mixture using a metal spoon.

Pour the mixture into the prepared loaf tin and level the surface.

Bake in the centre of the preheated oven for about an hour or until a skewer comes out clean after being inserted into the middle of the cake.

Leave to cool in the tin for 10 minutes before removing to a wire cooling rack.

For the topping;

Melt the chocolate and butter together in a heatproof bowl over a pan of simmering water.

Allow to cool and thicken and then spread evenly on the top of the cake.

Decorate with the sliced prunes and leave to set.

Store your chocolate prune loaf in an airtight container.

This cake is a really tasty way to get your daily fibre! Could be served with a dollop of clotted cream!
