If you want to make this easy recipe for chocolate pancakes with delicious banana filling you will need to gather together the following ;
INGREDIENTS
150g/5oz plain chocolate
100g/3.5oz plain flour, sieved
Pinch of salt
25g/1oz unsalted butter or baking margarine
1 tbsp muscovado sugar
1 medium sized egg
300ml/1/2pint semi skimmed milk
4 ripe medium sized bananas
METHOD
Chop or grate the chocolate.
Put half the chocolate into a blender with the flour, milk, egg and salt.
Blend until smooth.
Pour the batter into a bowl and chill in the fridge for half an hour.
Melt the butter and sugar together in a frying pan.
Slice the bananas and add them to the pan, stirring them over a medium heat for a few minutes.
Simmer until the bananas are soft then set to one side.
Brush a non stick frying pan with oil and put on to heat.
Stir the batter and pour enough into the pan to thinly coat the base.
Cook for a couple of minutes, turn and cook the other side.
Transfer to a plate and keep warm.
Repeat until the batter is used or you have the required number of pancakes.
Spoon the banana filling equally between the pancakes on one side.
Sprinkle the banana mixture with the rest of the chocolate.
Fold the pancakes in half and then in half again.
Serve with a scoop of vanilla ice cream.
A lovely warming dessert recipe and a great way to use up bananas which have passed their best and no one wants.
