This chocolate mousse cake recipe is suitable for those following a gluten free diet, though it is delicious for everyone else too! It is a very rich cake so serve in small portions. To bake a tasty chocolate mousse cake you will need the following ;
INGREDIENTS
6oz/175g plain or dark chocolate, chopped
2tbsp strongly brewed coffee
2oz/50g golden caster sugar
5oz/150g unsalted butter or baking margarine, cubed
3 medium eggs
1oz/25g ground almonds
Icing sugar for dusting
METHOD
Preheat the oven to 200C, 400F, Gas 6.
Grease and line an 8" round cake tin.
Place the chopped chocolate and brewed coffee in a large saucepan and place on a low heat, stir until the chocolate has melted.
Add the butter and sugar to the pan and stir until dissolved.
Remove the pan from the heat.
Whisk the eggs until frothy and stir into the chocolate mixture.
Stir in the ground almonds until well combined.
Pour the mixture into the prepared tin.
Bake in the centre of the preheated oven for 45-50 minutes until firm to the touch.
Allow to cool a little in the tin and then turn out onto a cooling rack.
Dust with the icing sugar.
Serve while still warm or allow to go cold and store in an airtight container.
Can be served with cream.
