This recipe for chocolate mince pies will make enough chocolate pastry for one 9" pastry case or about 9 mince pies.
INGREDIENTS
125g/4oz plain flour
1 tbsp cocoa powder
Pinch salt
60g/2oz caster sugar
60g/2oz butter
1 egg yolk
Few drops vanilla extract
1tbsp milk
Jar mincemeat
METHOD
Preheat the oven to 200C, 400F, Gas 6.
Grease a shallow muffin tin.
Sieve the flour, cocoa powder and salt into a large bowl.
Cut the butter up into small squares and rub into the flour mixture using your fingers until it resembles breadcrumbs.
Stir in the sugar.
Mix in the egg yolk and vanilla extract and stir the mixture together adding the milk if needed.
Knead to form a firm dough.
Wrap in clingfilm and chill in the fridge for at least half an hour.
Roll out the pastry thinly on a flat, lightly floured surface.
Using mince pie cutters cut 9 large and 9 medium circles.
Lay the large circles in the muffin tin.
Fill with a heaped teaspoon of mincemeat.
Cover with the smaller circles, enclosing the edges.
Brush with egg or milk.
Dust with caster sugar.
Bake in the preheated oven for about 20 minutes until firm to the touch.
Allow to cool and store in an airtight container.
