To make these indulgent chocolate cream muffins you will need ;
INGREDIENTS
225g/8oz self-raising flour
50g/2oz cocoa powder
115g/4oz brown sugar
150g/5oz white chocolate chips
2 eggs
250ml/9fl oz double cream
6tbsp sunflower oil
METHOD
Preheat the oven to 200C, 400F, Gas 6.
Line a muffin tin with 12 paper muffin cases.
Sift together the flour and cocoa powder into a large mixing bowl.
Stir in the sugar and chocolate chips.
Beat the eggs in a large jug and add the cream and oil, beat well.
Make a well in the dry ingredients and pour in the liquid ingredients.
Gently fold the mixtures together without over mixing.
Divide the mixture equally between the 12 muffin cases.
Bake for about 20 minutes until firm to the touch.
Transfer to a wire rack to cool.
Store in an airtight container.
I used white chocolate chunks for this recipe as I didn't have any chocolate chips, they were fine. These muffins are really good!
