To make these yummy chocolate chip scones you will need ;
INGREDIENTS
8oz/225g plain flour, sieved
2oz/50g caster sugar
2tsp baking powder
2oz/50g unsalted butter, chilled
100g packet plain or milk chocolate chips
6tbsp orange juice
METHOD
Preheat oven to 200C, Gas 6.
Line a baking sheet with greaseproof paper.
In a large mixing bowl add the flour, baking powder and sugar and stir to combine.
Add the butter, cubed, and using your fingertips blend until mixture resembles breadcrumbs.
Stir in the chocolate chips.
Add the orange juice and knead into a dough.
Turn out dough onto a floured surface and mould into a large circle.
With a knife divide into 8 portions.
Place the portions on the tray and bake in the centre of the oven for 20-25 minutes.
Chocolate Chip Rock Cakes
Here is another of my chocolate chip recipes. To make chocolate chip rock cakes you will need ;
INGREDIENTS
225g/8oz self-raising flour
125g/4.5oz butter or baking margarine
100g/3.5oz plain chocolate chips
75g/2.5oz caster sugar
1 egg
90mls/3fl oz milk
1/2tsp ground cinnamon
METHOD
Preheat the oven to 190C, 375F, Gas 6.
Grease and line 2 baking sheets.
Sieve the flour into a large mixing bowl.
Chop the margarine into small cubes and add to the flour.
Using your fingers rub the margarine into the flour until it resembles breadcrumbs.
Stir in the sugar and the chocolate chips.
Beat the egg and the milk together in a jug.
Add to the mixing bowl.
Stir using a fork to bind together into a soft dough.
Spoon small mounds onto the baking sheets.
Bake in the preheated oven for about 15 minutes until golden brown and firm to the touch.
Remove from the oven and transfer to a cooling rack.
Best eaten warm.
Store in an airtight container.
Chocolate Chip Loaf Cake
Here is another in this collection of chocolate chip recipes, it is chocolate chip loaf cake. To bake it you will need ;
INGREDIENTS
4oz/115g/1/2cup caster sugar
4oz/115g/1/2cup butter or baking margarine, softened
4oz/115g/1cup plain flour, sieved
1tsp baking powder
2 medium eggs, beaten
100g bag milk or plain chocolate chips
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Grease and line a standard loaf tin.
Using an electric mixer whisk the butter and sugar together until light and fluffy.
Add the eggs bit by bit whisking in between.
Gradually add the sieved flour and baking powder and whisk until smooth.
Fold in the chocolate chips with a wooden spoon.
Pour the mixture into the prepared tin and bake in the centre of the oven for 45-50 minutes.
Test by inserting a skewer, should come out clean.
Leave to cool in tin for 5 minutes then transfer to a cooling rack.
Serve or store in an airtight container.
Banana Chocolate Chip Cake
Last but not least in this collection of chocolate chip recipes is this tasty banana chocolate chip cake! You will need;
INGREDIENTS
9oz/250g self raising flour, sieved
5oz/150g golden caster sugar
3.5oz/100g unsalted butter, melted and cooled
2 eggs, beaten
9oz/250g peeled ripe bananas, mashed
2.5oz/75g plain chocolate chips
Pinch salt
METHOD
Preheat oven to 180C, 350F, Gas 4.
Grease and line a standard loaf tin.
Place the flour, sugar and salt into a large mixing bowl and stir.
Add the butter and eggs and mix well.
Add the mashed bananas and chocolate chips and beat until thoroughly combined.
Pour the mixture into the prepared tin and level off the top.
Bake in the centre of the oven for one hour until golden brown.
Test by inserting a knife into the centre and checking it comes out clean.
Leave to cool slightly and then turn out onto a cooling rack.
Serve while warm or allow to cool completely and store in an airtight container.
