For this delicious chocolate chip cheesecake recipe you will need ;
INGREDIENTS
12oz/350g/1.5cups cream cheese
4tbsp whipping cream
8oz/225g/1cup caster sugar
3 eggs
100g bag plain chocolate chips
For the base
4.5oz/115g/1.5cups crushed digestive biscuits or graham crackers
3oz/75g/6tbsp melted butter
To decorate
Whipping cream and grated plain chocolate
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Mix the melted butter and crushed biscuits together in a bowl.
Press the mixture firmly over the base of a 9"/23cm pie dish.
Bake for 8 minutes and leave to cool.
Whisk together the cream cheese and cream until smooth.
Whisk in the sugar.
Beat in the eggs one at a time.
Stir in the chocolate chips until well mixed in.
Pour onto the biscuit base and bake in the centre of the oven for 25-30 minutes.
Allow to cool completely.
Decorate the top with piped whipped cream and grated chocolate.
Serve with any left over cream.
Store in a refrigerator.
