I have selected some of my favourite chocolate brownie recipes and put them together here!
White Chocolate Brownies
To make these irresistible white chocolate brownies you will need ;
INGREDIENTS
3oz/75g unsalted butter
14oz/400g white chocolate
3 eggs
3.5oz/90g caster sugar
2tsp vanilla extract
3.5oz/90g sultanas
1tbsp lemon juice
7oz/200g plain flour
METHOD
Preheat the oven to 190C, 375F, Gas 5.
Grease and line a 11"x8" shallow rectangular baking tin.
Melt the butter and 11oz/300g of the white chocolate in a heatproof bowl over a pan of simmering water.
Stir until smooth, remove from the heat and pour into a large mixing bowl.
Beat in the eggs and sugar then add the vanilla, sultanas and lemon juice, stir until well combined.
Sieve in the flour and stir well.
Chop the remaining chocolate into small pieces and stir into the mixture.
Pour the mixture into the prepared tin and level off.
Bake in the centre of the oven for about 20 minutes until risen and golden.
Leave to cool in the tin and then cut into squares.
Store in an airtight container.

Black Cherry Brownies
Another in this collection of chocolate brownie recipes is this one to make delicious black cherry brownies.You will need ;
INGREDIENTS
8oz/225g plain chocolate
4.5oz/125g butter
3 eggs
3tbsp double cream
8oz/225g caster sugar
5.5oz/160g plain flour
3.5oz/100g chopped plain chocolate
Large tin or jar of black cherries
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Grease and line brownie tin.
Melt 8oz/225g plain chocolate in a heatproof bowl over a pan of simmering water.
Add butter and cream and stir until mixture is smooth.
Whisk the eggs in a large mixing bowl.
Add 2tbsp syrup from the tin of cherries and the sugar and whisk until thick.
Add the melted chocolate mixture and whisk again.
Sieve the flour into the bowl and stir.
Stir in the chopped chocolate.
Pour the mixture into the prepared tin and spread evenly.
Drop the cherries evenly on the surface of the mixture.
Bake in the centre of the oven for about 45 minutes until firm to the touch.
Leave in tin to cool slightly, remove and cut into squares.
Serve while warm with cream or ice-cream.
Can be stored in an airtight container for up to 4 days.
When I made these brownies I couldn't find any black cherries so I used a jar of dark morello cherries in syrup. They were still really good!
Chocolate Chip Brownies
To make 12 good sized squares of these tasty chocolate chip brownies you will need ;
INGREDIENTS
150g/5.5oz plain chocolate
225g/8oz butter
125g/4.5oz caster sugar
4 eggs
225g/8oz self-raising flour
75g/3oz chopped, mixed nuts
100g/3.5oz white chocolate chips
icing sugar for dusting (optional)
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Grease and line a 9" square baking tin.
Melt the butter and plain chocolate in a bowl set over a saucepan of simmering water.
Sift the flour and stir in the caster sugar.
Beat the eggs and stir into the chocolate mixture.
Pour this mixture into the flour and sugar and beat well.
Stir in the nuts and white chocolate chips.
Pour into the tin, spreading evenly.
Bake for 30 minutes until firm to the touch.
Leave to cool in the tin then turn out onto a wire rack.
Dust with icing sugar if required.
Cut into 12 squares and serve.
Store in an airtight container.
Coffee Brownies
To make these moreish coffee brownies you will need ;
INGREDIENTS
75g/3oz butter
200g/7oz soft brown sugar
1tbsp instant coffee powder
1 egg
150g/5oz self raising flour
150g/5oz plain chocolate, chopped into small chunks
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Grease and line a 8" square shallow cake tin.
Using a large heavy saucepan heat the butter and the sugar together until the butter has melted.
Dissolve the coffee powder in 1tbsp hot water and add to the pan.
Remove the pan from the heat and when cool whisk in the egg.
Sieve the flour into the mixture and stir until well combined.
Stir in the chocolate chunks.
Pour the mixture into the prepared cake tin and level off.
Bake in the preheated oven for 30-40 minutes.
Remove them from the oven when they seem slightly under done as they will firm up when they cool.
Leave in the tin for 10 minutes before cutting into squares and putting on a wire rack to cool completely.
Serve or store in an airtight container.

Peanut Butter Brownies
To make these tasty peanut butter brownies you will need ;
INGREDIENTS
150g plain chocolate, chopped
100g butter
215g caster sugar
75g plain flour
2 tbsp cocoa powder
2 eggs
200g peanut butter, crunchy or smooth depending on preference
METHOD
Preheat oven to 160C.
Grease and line a shallow brownie tin.
Place the chocolate and butter into a large heatproof bowl over a saucepan of simmering water.
Stir until the chocolate melts and mixture is smooth.
Combine sugar, flour and cocoa powder in a mixing bowl.
Add chocolate mixture and eggs and stir until just combined.
Stir in the peanut butter and pour into prepared pan.
Bake in oven for 45 mins until firm to the touch.
Transfer to a cooling rack.
Slice and serve your delicious peanut butter brownies!
