This is a really good chocolate brandy torte with just a hint of brandy which gives it a lovely flavour.
To bake this torte recipe you will need to gather together the following ;
INGREDIENTS
4oz/125g unsalted butter or baking margarine, cubed
8oz/225g plain chocolate, chopped
3 large eggs, separated
4oz/125g soft brown sugar
4tbsp brandy
3oz/75g self-raising flour, sieved
2oz/50g ground almonds
Icing sugar for dusting, optional
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Grease and line a deep 8" cake tin.
Place the butter and chocolate in a heatproof bowl and set over a pan of simmering water, stir until melted and smooth.
Remove from heat and allow to cool.
In a large mixing bowl place the egg yolks and brown sugar and whisk well until soft and fluffy.
Whisk in the brandy and melted chocolate mixture until well combined.
Fold in the flour and ground almonds until well combined.
In a clean grease free bowl whisk up the egg whites (with clean whisk attachments) until they form soft peaks.
Fold the egg whites into the large mixing bowl with a metal spoon until well combined.
Pour the mixture into the prepared tin.
Bake in the centre of the preheated oven for about 45 minutes until firm to the touch.
Allow the cake to cool in the tin for 10 minutes and then transfer to a wire rack to cool completely.
Place on a serving plate and dust with icing sugar.
