To make this warming chocolate and peach bake you will need ;
INGREDIENTS
200g/7oz plain chocolate
125g/4oz caster sugar
125g/4oz butter
425g peach slices
4 eggs
1/2 tsp ground cinnamon
icing sugar to decorate (optional)
fresh double cream for serving
METHOD
Preheat the oven to 170C, 325F, Gas 3.
Grease an ovenproof dish.
Melt the butter and chocolate in a bowl standing over a pan of simmering water.
Separate the eggs and whisk the yolks up with the sugar until thick and creamy.
Stir the chocolate/butter mixture into the egg yolk mixture.
Whisk the egg whites until they form stiff peaks and lightly fold into the chocolate mixture.
Fold the drained peach slices and cinnamon into the mixture and pour into the prepared dish.
Bake for 30-40 minutes until risen and firm to the touch.
Sieve the icing sugar over the bake and serve with fresh cream.
