These chewy chocolate chip cookies are delicious straight from the oven.
INGREDIENTS
250g/9oz plain flour
1/2tsp bicarbonate of soda
1/2tsp salt
170g/6oz unsalted butter (melted)
200g/7oz dark brown soft sugar
100g/3.5oz caster sugar
1 tbsp vanilla essence
1 egg
1 egg yolk
200g/7oz chocolate chips (milk, white or mixed)
METHOD
Preheat the oven to 170C, 340F, gas 3.
Grease 2 large flat baking trays well.
Sift together flour, bicarbonate of soda and salt.
Cream together the melted butter, brown sugar and caster sugar until smooth.
Beat in vanilla, egg and egg yolk.
Mix in the sifted ingredients until blended.
Stir in the chocolate chips.
Drop a tbsp of cookie dough onto the tray for each cookie.
Bake for around 15 minutes until firm to the touch.
Cool on a wire rack and serve.
Store your chewy chocolate chip cookies in an airtight container.
