If you want to make this tasty cappuccino cake you will need to gather together the following ;
INGREDIENTS
8oz/225g self-raising flour, sieved
1tsp baking powder
2tsp cocoa powder
8oz/225g butter, softened
8oz/225g golden caster sugar
4 medium sized eggs
3tbsp instant coffee powder
topping
100g bar of white chocolate
2oz/50g butter
6oz/175g icing sugar
2tbsp milk
METHOD
Preheat the oven to 180C, 350F.
Grease and line a shallow 11"x7" baking tin.
In a large mixing bowl cream together the butter and sugar with an electric whisk.
Dissolve the coffee powder in 2tbsp hot water.
Sieve the flour with the baking powder and cocoa.
Beat the eggs.
Add the flour mix, the coffee and the eggs to the mixing bowl gradually and alternating, whisking in between until all the mixture is well combined.
Pour into the prepared tin and level off the surface.
Bake in the centre of the preheated oven for about 40 minutes until well risen and firm to the touch.
Carefully turn out onto a wire cooling rack and allow to cool.
To make the topping
Melt the butter and chocolate in a heatproof bowl over a pan of simmering water.
Remove from the heat and sieve in the icing sugar, mix well.
Add the milk little by little until a desired consistancy is formed.
When the cake is cool spread the topping over the surface evenly and cut into squares.
Enjoy your delicious cake!
