Brownie Muffins

A really tasty recipe for brownie muffins! To make a batch of these yummy muffins you will need ;

INGREDIENTS

175g salted butter or baking margarine, softened

150g golden caster sugar

100g muscovado sugar

3 tbsp cocoa powder, sieved

4 tbsp golden syrup

100g plain flour, sieved

1 tsp baking powder

3 eggs, beaten

100g plain chocolate, chopped

200g chopped walnuts (optional)

METHOD

Preheat the oven to 180C, 350F, Gas 4.

Line a muffin tin with paper cases.

In a large mixing bowl cream together the butter with both the sugars.

Beat in the cocoa powder and the golden syrup.

Gradually add the eggs beating well in between.

Fold in the sieved flour and baking powder.

Roughly chop the chocolate and stir into the mixture.

Add the walnuts if you are using them and stir until all the ingredients are well combined.

Spoon the mixture in to the muffin cases, you should get between 12 and 18 depending how big you want them to be.

Bake in the centre of the preheated oven for around 25 minutes until firm to the touch.

Remove from the oven and place on a wire rack to cool.

Serve or allow to cool completely and store in an airtight container.

Now you have a delicious batch of brownie muffins!
