Breakfast Muffins

To make these lovely breakfast muffins you will need ;

INGREDIENTS

400g/14oz self-raising flour, sieved

2 eggs

80g/3oz soft brown sugar

1tsp cinnamon

4tbsp vegetable oil

100g/3.5oz chocolate chips

500ml/17fl oz milk

METHOD

Preheat the oven to 190C, 375F, Gas 5.

Line a muffin tin with 12 large paper baking cases.

Sieve the flour and cinnamon into a large mixing bowl.

Stir in the brown sugar and chocolate chips.

Beat the eggs in a jug and add the milk and oil, beat together until well combined.

Make a well in the centre of the flour mixture and pour in the milk mixture.

Stir gently until well combined.

Spoon the mixture into the baking cases.

Bake in the oven for about 15 minutes until well risen and firm to the touch.

Serve warm or allow to cool and store in an airtight container.
