This isn't a traditional blondies recipe, (which would contain brown sugar). It is more of a brownie made with white chocolate. I think it's just as good though.
They are really light and fluffy and very moreish! If you would like to bake a batch you will need to gather together the following ;
INGREDIENTS
5oz/150g white chocolate, chopped
3oz/90g butter or baking margarine, cubed
4 medium sized eggs, beaten
5oz/150g golden caster sugar
1 tsp vanilla extract
6oz/180g self-raising flour
METHOD
Preheat the oven to 180C, 350F, Gas Mark 4.
Grease and line a 7"x11" (18x28cms) rectangular cake tin.
Place the white chocolate and the butter in a heatproof bowl over a pan of simmering water.
Stir until melted and smooth.
Allow to cool a little.
In a large mixing bowl beat together the eggs and sugar and vanilla extract.
Whisk in the melted chocolate/butter mixture.
Sieve in the flour and stir until well combined.
Pour into the prepared tin and level off the top.
Bake in the centre of the preheated oven for about 40 minutes until firm to the touch.
Allow to cool in the tin and cut into equal sized rectangles.
Transfer to a wire rack.
Serve.
