This berry and cream panettone is extremely simple as you buy the panettone ready made. To make it you will need ;
INGREDIENTS
A 500g ready made chocolate chip panettone
A 400g pack frozen mixed berries
300ml/10fl oz whipping cream
120g/4oz plain chocolate
1tbsp caster sugar
METHOD
Slice the panettone into 5 slices.
Save some of the nicer looking berries to decorate.
Place the rest of the berry mix into a bowl slicing any large ones.
Add the caster sugar to the berries.
Whip up the cream until it forms stiff peaks and carefully fold through the berries.
Spoon the cream/fruit mixture on the panettone slices and sandwich them to form a stack.
Melt the chocolate in a heatproof bowl over a pan of simmering water.
Pour the chocolate over the top of the panettone.
Freeze for at least 4 hours.
Remove from the freezer 10 minutes before serving and decorate with the defrosted berries that were put to one side.
Slice to serve.
I made a smaller version using a 100g panettone and adjusting the amounts of the other ingredients. This is sufficient for 2-3 people.
