To make these tasty banana chocolate chip muffins you will need the following ;
INGREDIENTS
275g/9.5oz self-raising flour, sieved
1 tsp bicarbonate of soda
1/2tsp salt
450g/1lb bananas, roughly 3 medium, mashed
125g/4.5oz caster sugar
1 medium egg, beaten
50ml/1.7fl oz milk
75g/2.5oz butter or baking margarine, softened
100g packet of plain or milk chocolate chips
METHOD
Preheat the oven to 180C, 350F, Gas 4.
Place a dozen paper muffin cases in a muffin tin.
Sieve the flour, bicarb and salt together in a large mixing bowl.
Peel and mash the bananas.
Cream the butter and sugar together.
Add the bananas to the butter mixture and mix well.
Stir in the milk and beaten egg.
Add the wet ingredients to the flour mixture and stir in the chocolate chips.
Stir gently, don't over mix.
Spoon the mixture equally into the muffin cases and bake in the preheated for about 20 minutes, until firm to the touch.
Remove from the oven and transfer to a cooling rack.
Serve while still warm or allow to cool completely and store in an airtight container.
