Baked Alaska With Chocolate Ice Cream

Try a twist on an old favourite with this baked alaska dessert recipe ;

INGREDIENTS

1 small ready made sponge flan case

500ml/17fl oz tub of good quality chocolate ice cream

125g/4oz caster sugar

3 egg whites

2 tbsp apple juice

4 tbsp raspberry jam

METHOD

Place the flan case in an ovenproof pie dish.

Drizzle the apple juice over the sponge.

Spread the jam evenly over the sponge.

Upturn the tub of ice cream on top of the sponge and gently ease the ice cream out.

Place on a flat surface in the freezer.

Whisk up the egg whites in a clean, grease-free bowl until they form stiff peaks.

Carefully fold in the sugar.

Spread this mixture all over the ice cream making sure it is completely covered and the sponge base is sealed.

Return to the freezer for an hour or more.

Preheat the oven to 220C, 425F, Gas 7.

Bake only when oven is up to temperature for 5 minutes until the meringue starts to go brown.

Serve immediately.
