Apricot Krispies

Easy recipe for deliciously sticky apricot krispies made with white chocolate. Children love these! Handy for kids parties or an after school snack.To make a batch you will need ; INGREDIENTS 100g/3.5oz white chocolate 75g/3oz unsalted butter 75g/3oz golden syrup 75g/3oz rice krispies/rice pops 50g/2oz porridge oats 50g/2oz dried apricots, chopped METHOD Grease and line a shallow baking tin. Melt the chocolate, butter and syrup in a bowl over a pan of simmering water (with adult supervision)until smooth. In a large mixing bowl stir together the rice krispies, oats and apricots. Pour the melted chocolate mixture into the large bowl and stir well until everything is well covered. Spoon the mixture evenly into the tin and level the surface. Chill in the fridge for at least 3 hours until set. Remove from tin and carefully cut into squares. Serve or store in an airtight container.
